Assistant Pastry Instructor
Ellexis learned to bake as a child and it has been her true, life-long passion. After training at NWCAV in Bread and Pastry arts (2009) she worked in chocolate, catering and restaurants before choosing to specializes in plant-based patisserie. Since 2016, Ellexis has been actively teaching both public and professional classes on plant-based cooking and pastry in Vancouver. Through her teaching, she has developed a strong and contemporary repertoire of plant-based recipes that continue to be improved and expanded each semester with Northwest students. In addition to her pastry qualifications, Ellexis has extensive experience in writing, publishing and teaching from her former career in academia (PhD in Sociology, Kinesiology, from the University of British Columbia) and worked as a university instructor, researcher and writer on topics relating to social inequality. Ellexis also has a passion for growing food and foraging food and learning how to create new flavours and healthy food from them. Northwest is her happy place where she gets to work alongside her heroes and learn from our amazing students.
