Douglas worked in leading fine dining restaurants in Toronto, Vancouver, and Europe. A consummate and meticulous professional, he throws all his passion into the most important tool in the craft: the knife. Douglas has played an important role in what we put in our student toolkit and is invited at the beginning of every term to demonstrate the artisanal way of sharpening, handling, and caring for your knife. Since our relationship with him, our students’ knives are maintained sharper than any time in our history.
