Culinary instructor, co-owner. Knew a career in kitchens was for him very early in life. Trained and worked as a chef in the busiest kitchens in Vancouver (Joe Fortes, Vancouver Fairmont Hotel), Toronto (at the Four Seasons during Lynn Crawford’s tenure), the professional car-racing circuit, and as consultant for the opening of the Brown’s Social House chain. Has cooked for a staggering amount of people thus far in his career (hundreds of thousands), including his four children. Is tireless and (almost) capable of being in two places at the same time. Curtis is extremely well connected with chefs in the city, and is an unpretentious straightforward personality who keeps things real. Does all the butchery. He also wears a mean tool-belt, which comes in handy in an operation with many moving parts, and partners who don’t know the difference between a Phillips and Robertson screw bit, yet often start a sentence with “what if we built a…”
