Jody personifies a Northwest student – someone with a love of food, a diverse career trajectory and an entrepreneurial spirit. As someone who was surrounded by fresh fruit and vegetable gardens year-round growing up in Southern California, she brought that same enthusiasm for food to the Sunshine Coast when she moved to BC in 2007. Her passion for seasonal ingredients was reflected in the supper club she established after graduating from Northwest and continues at her Gibson’s restaurant, Lunitas, to this day. “I am endlessly inspired by seasonal cuisine, new ideas and creating daily specials that are heavily influenced by what is fresh and new at the local markets and shops.
