Jack’s story is about trusting mentorship. He was one of the more naturally bright students – acing anything theoretical – yet had to work hard to master the practice. Hence, he placed his practical endeavours in the hands of people he trusted and valued. His dedication to his practicum with Chef Robert Belcham was his turning point. He then worked a whole year at Wickaninish Inn in Tofino, paid more dues back in London, England, and, spent time in Italy to learn the food he was ready to throw himself into. He has always remained loyal and in touch with the people who influenced him. He was a smart student in school, but an even smarter learner once in the industry. Thus, he understands that learning is perpetual. That’s brilliant!
